Russian Red Borscht (Русский Красный Борщ)

"Made Russian Borscht and just wanted to share my recipe"

(my own recipe, because everyone does it a little bit differently)




Step-by-Step Instruction:

Step 1.
First you boil the meat (chicken or beef), I use chicken!!!
I cut the chicken in little cubes and boil it in the little pan separate from the pan you are going to use for the whole borscht.  All the stuff that you are going to need first: 2 slices of chicken and about 6 potatoes.  This recipe is done for a big family about 7 to 8 people.  If you need to make it smaller then just do smaller portions of ingredients.

Move it to the larger Pan with clean water.



This is when the chicken that's already cooked and put in the bigger pan, with clean water.



Step 2.
After the chicken is boiled, put the chicken in the the bigger pan where you are going to cook borscht.  I do that so the water is more cleaner.  Then, peel the potatoes, cut them in cubes and put them in the pan with the chicken until they get boiling and boil them for extra 15 - 20 minutes long.



Chicken and Potatoes are boiling together.


Step 3.
Now it's time to cook the red beets.  I used to cook them separately in the pan, but it takes so much time....  All I do now is put the beets into the microwave (make sure the beets are in the little plastic bag when you put them in the microwave because they will splatter all over if you're not going to use the plastic bag) for 5 minutes then cut them in half and do another 2 or 3 minutes depends on the size of the beets (or how many beets you have) and if they are ready or not.  For this recipe I used only 1 big red beet, you can see in the picture how big it is, even after I cut it in 4 pieces.


Step 4.
After red beets are cooled down you can peel the skin then cut them and prepare for frying.  As you can see on the picture the 1 big red beet, 1 big carrot and 1 white onion are chopped and ready for frying.


Step 5.
Now put the chopped onion(s) in the frying pan to fry, use any oil that you would like.  I use Canola Oil:


Step 6.
When the chopped onion(s) gets slightly brown you can add chopped carrot(s) to the frying pan too.


Step 7.
After, the onion(s) and carrot(s) has been frying for about 5 - 10 minutes it's time to add red beet(s) to the frying pan too.  It should look just like this:



Step 8.
Okay, now it's time to add all of the spices!  I add them into the frying pan where onion(s), carrot(s) and red beet(s) is frying. This is all of the spices that I use:


Then it's time to add 1 can of tomato sauce, and half of a can of tomato paste into the frying pan too.  This is how it looks like:


Step 9.
After about 3 - 5 minutes of frying, add all of that stuff to the big pan where your chicken and potatoes have been boiling.


Add a little bit of chopped parsley and dill.




After it boils for about 10 minutes it should be done (the other way to know when it's done if the potatoes are soft then that means everything is done), then just taste is make sure the spices are perfect in there and it's DONE.

Step 10.
When it's all done just put it in the bowl so it gets cool down a little, then you can eat with bread and a spoon of sour cream, some people don't like sour cream so you can just eat it with bread.
